Chilli Mango Mania Chicken Curry

Ingredients

- 2 shallots, chopped
- 6 garlic cloves, sliced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 tablespoons olive oil
- 2 tablespoons garam masala
- 1 jar O’Mimo’s Chilli Mango Mania Hot Sauce
- 1 cup coconut milk
- 4 chicken fillets, diced
- 1 mango, diced
- A handful of fresh coriander
- Salt and black pepper to taste
- Steamed rice and naan bread to serve

Method

Sauté the chopped shallots and sliced garlic cloves in olive oil. Add the diced red and green bell peppers, cooking for another 3 minutes. Stir in the garam masala, O’Mimo’s Chilli Mango Mania Hot Sauce, and coconut milk. Once it starts simmering, add the diced chicken fillets, cover, and cook on medium heat for about 15 minutes. Then, add the diced mango and fresh coriander, cooking for another 5 minutes. Adjust seasoning to taste.

Serve with fluffy steamed rice and warm naan bread for the ultimate comforting meal.
